I have this friend that makes the yummiest peanut butter cup cupcakes, and I love them. She sells them at a movie theater, occasionally at a restaurant, and then you can order them from her as well. Of course, I resist ordering them because I know I will just eat them all, and want more. So, it seems that every weekend I drive down to the theater to buy one cupcake for me and one for Brett. I decided that it was getting a little ridiculous, so I started searching out recipes, and kind of combined all of them to create my own recipe for these delicious cupcakes. Here is the result.
I just used a devil's food cake mix for the cupcake part, and the frosting was this:
1.5 c peanut butter
2 cups powder sugar
2 cups powder sugar
1 stick of butter
2 tsp vanilla
3-4 T of milk
Cream together the pb and butter, then add in the vanilla, and powder sugar, then add in milk to make it the consistency you want. I tasted mine at this point and it was too powder sugary, so I added more peanut butter (reflected in the measurements above). Thus the adjustment. I piped it on, cut a peanut butter cup in half, and stuck it on top. Yum!
